This research investigated odor perception of geosmin, 2-methylisoborneol, and nonadienal andcorrelation to vapor phase concentrations. Unitless Henry's Law constants were calculated atmultiple temperatures (20, 25, 32 and 39C) using the vapor and aqueous phase concentrations.The values for Henry's Law constants ranged from 0.002 to 0.02 for four temperatures between20 to 39C with geosmin and 2-MIB having similar values and higher values than for nonadienal.The data demonstrated that as the gas phase concentration increased, the perceived odor intensityalso increased, but only up to a certain point. Although the vapor phase concentration linearlyincreased as the aqueous phase concentration increased, the Flavor Profile Analysis (FPA) intensity increased at a muchreduced rate and eventually leveled-off.
